Alright, here is another super easy breakfast -slash- dessert. It is pancakes with a nice twist. Whipped cream and chocolate chips. There are a couple options for making this. First you make the pancake batter, then you can put chocolate chips in it and cook the pancakes in all there chocolatey glory (I like this way the best,) or you can not put any chocolate chips in, cook them plain and sprinkle chocolate chips on afterwards.
After you have cooked them you get to top them. The one closest to the camera has butter and homemade buttermilk syrup on it. The one farther away has chocolate whipped cream and chocolate chips. (Recipes below.) They are both supremely delicious, and you should try both.

Chocolate Whipped Cream:
1 cup heavy whipping cream1 small package chocolate pudding
Stir together chocolate and whipping cream in medium bowl until smooth. Whip with hand mixer until it forms soft peaks (or whatever consistency you like your whipped cream). Chill in the refrigerator until ready to serve.
Buttermilk Syrup:
1 1/2 cups white sugar 3/4 cup buttermilk 1/2 cup butter 2 tablespoons corn syrup 1 teaspoon baking soda 2 teaspoons vanilla extract |
| In a saucepan (make sure it is really big. The first time I made this it ended up boiling over and spilling hot sugar all over the burner. Not a good smell, and extremely hard to get off), stir together the sugar, buttermilk, butter, corn syrup, and baking soda. Bring to a boil, and cook for 7 minutes. Remove from the heat, and stir in the vanilla. |
